rewrite README: fix typos, add versions table, validation docs
- fix "verison" → "version", "pyhiscal" → "physical", "distiction" → "distinction"
- add versions table explaining each layout version
- add installation from DMG section
- add validation section with usage examples
- restructure changelog with clearer per-version descriptions
- fix dead key table formatting
